Summer is over, but eating well is always in season, and we're ready to help with your Holiday menu! Let's start with drop-off catering. If you've got the main course covered but are looking for sides and salads to bring it all together and add the perfect finishing tastes and touches to your Holiday menu, we've got some great suggestions. Our healthy and delicious Fall Spinach, Sweet Butter and Kale salad with roasted pears, figs, pomegranate, goat cheese and honey-dijon dressing, adds a light and refreshing counterbalance to those mashed potatoes and candied yams! And beautiful sides, like our roasted squashes with caramelized onion and feta cheese, will pair perfectly with your already-delicious, classic holiday entrees.

If you love to cook and are prepping meals for your friends and family, one of our Autumn Grazing Boards is a nice way to nibble while you work, letting you sample and savor flavors not on your holiday meal’s main menu. We also have a great way to help you wind down...for when you don’t feel like cooking dinner after prepping all day long; a warm, cozy meal, like our Creamy Brown Butter, Roasted Garlic Mushroom and Sage soup, delivered hot and ready to eat, can be the perfect way to relax and settle-in at the end of the day.

And when it comes to meal prep and planning, we can take care of that too! From doing the prep work for you, to shopping for and delivering the perfect, hand-picked ingredients to you door, we’re here to help make holiday meals a treat instead of a chore.

Quite a few were drop-offs, others were for bachelorette parties, and some were part of well-spent evenings-in for friends and family parties. This isn't a glamour pic, and it's not supposed to be. But it is a glorious pic of delicious and lovingly crafted food, that could be waiting and ready for you when you get back home from a long, hot day at the beach, shopping excursion or just lounging around the pool, like it is for this family. Yes, we do a lot of on-site, personal chef meals and events, but we do a lot of drop-offs too, especially our seafood bakes.

This is one we just did for a family vacationing in Lewes. Visiting from all over the country: New Jersey, Pittsburgh and California, they do a family vacation every year in the area so they can reconnect and spend quality time together. As their trip was winding down, they were looking for a no-stress, no-work way to enjoy a send-off seafood dinner before they all went off in different directions. In addition to our seafood bake, they added a grazing tray, one of our grill packages, this one with hot dogs, tenderloin medallions, seared tuna and chicken skewers, and cream puffs, cookies and assorted other sweet treats to finish it off.

And while we always enjoy seeing our clients faces light up when they watch us cook for them and taste our food, this one added another element, which came with the look of complete and utter relief and relaxation on everyone's face, knowing it was time to just sit down and eat and they didn't have to do anything but get in touch with us, then wait to dig in.

4 For The Road

Another Delicious Week

Since we're personal chefs at the Delaware beaches, we always take our show on the road, and this week was especially fun, having four events spread throughout Rehoboth, Dewey, Bethany Beach and Frankford.

Beginning on Wednesday, we created a seafood lover's feast for a family birthday party in Bethany. The menu was made up of one of our signature Grazing Boards and a Seafood Bake for 18 people, which featured whole lobsters, grilled andouille sausage, grilled corn, buttery-herbed potatoes and copious amounts of clams, mussels and shrimp and a few dozen steamed blue crabs to round out the experience.

Fast forwarding to Friday, we switched gears and locales, going to Rehoboth for a Bachelorette party. Another seafood-focused menu, this party included a series of taste-bud tantalizing small plates; the line-up included Tuna Tartare, Oysters Rockefeller, Blackened Shrimp Tacos with Street corn and Cotija cheese, finished off with a Seared Scallop Caesar salad and a Pineapple Cucumber Gazpacho. And another gorgeous Grazing Board!

Shifting to Saturday, we set-up shop in Dewey and Frankford. Our Dewey date was with one of our regular and favorite clients, who were hosting a weekend grill night with Tomahawk and Ribeye steaks, fresh Veggie, Jumbo Shrimp and Chicken kebobs, Quinoa and corn salad, Kale and Brussels sprout salad and a noshing station of Tuna Tartare, Guacamole, House made Hummus and Salsa with chips and Shrimp Cocktail.

In Frankford, it was grilled Veggie Skewers loaded with tomatoes, mushrooms, zucchini, squash and onions, along with grilled Jumbo Shrimp and Marinated Chicken kebobs, a Greek Pasta Salad with lots of garden veggies and a Grilled Peach and Roasted Beet salad.

Come Saturday night, we were beat and feeling a little roasted ourselves, but feeling good and appreciative that we got to make people happy by doing what we love: sharing our time and cooking for them.

A Taste For Family

After a whirlwind weekend of private parties and personal chef dinners (and brunch), we were reminded again, of why we love food and how it connects us all. We spent days prepping for back-to-back parties that at first, seemed to have wildly different menus and dietary needs, but found that like food, people are a lot more alike than they are different, regardless of their backgrounds and tastes. We are all the same in the presence of food and family. And when we sit down to eat together, we do more than open our mouths, but our hearts, minds and souls as well. And when our clients welcome us into their families to share their experience, gratitude and love, we are grateful and humbled.

Okay, enough pontificating, onto the food! For all the differences we talked about, both parties had guests that ate vegan, one for cultural reasons, the other as a lifestyle choice. Whatever the case, this always adds a delicious extra dimension to the meal. For one party, this meant the substitution of cauliflower steaks in place of the breaded chicken cutlets we served for their main course, for the other, we got even more creative with Ahi watermelon tuna steaks.

The cauliflower steaks were thick-sliced and marinated in a spicy flavor profile overnight. When it came time to make dinner, we drizzled them with olive oil, hand made breadcrumbs, then baked them on high heat until they had a crispy, slightly charred crust. We served them with fresh pasta and our also fresh made red sauce. While we are happy that they loved the steaks, we were just as happy to have one of the family's "foodie" aunts, ask us how we got the flavor profile we did on the steaks as well as ask us for our red sauce recipe, which we were also happy to share. Even better, was her sharing some of her favorite spice mix and flavor profiles with us.

The Ahi watermelon tuna was as much a treat for us to make as it was for our clients to eat. It's a dish we dabbled with before, and to which we did a bit of experimenting with prior to the party. We're kicking around the idea of a recipe how-to for this, but until then, let's just say, we're amazed at the virtual transformation the watermelon takes on its way to becoming "tuna". It's incredible. Delicious too! Like our other party, it warmed our hearts when the guest of honor, and matriarchal vegan, shared with us her reasons, journey and insights why she's vegan. She's also going to share some recipes with us, which we can't wait to try.

Events like these, where we get a little more insight into other cultures, ways of life and talking with people who enjoy food as much as we do, adds another layer of "flavor" to what we do.

A Fun Feast For All!

One of our favorite clients to work with, when Amy called us to cater Brooke's birthday, we were happy to do it; by now, they're like family to us!

The menu this time around included our Seafood Bake, with fresh peel-and-eat shrimp, mussels, littleneck clams, lobster, corn, potatoes and andouille sausage, all cooked fresh at their place. We also added a bushel of large and jumbo, steamed Maryland crabs to add a bit more legendary, local seafood flavor.

Making the evening even sweeter, was another showing of our Double Peanut Butter Chocolate Cake, Strawberry -Banana Cup Cakes and our newest favorite, Brown-Butter Chocolate Chip Toffee Cookies.

It's Always A Great Time To Eat Dessert!

We make sweet treats to go along with our savory creations, and you're looking at one of them right now. Say hello to our very own, made-from-scratch, Double Peanut Butter Chocolate Cake. Weighing in at a not-so-svelte 5lbs., this double-stack of delight was made for a client who likes her sweets on the subtle side, that is, desserts that engage all the taste buds, balancing pops of sugar with hints of savory for a flavor that's "all-in" delicious. Our DPBCC combines two types of peanut butter goodness in the forms of buttercream and a rich, smooth filling. The cake is dark chocolate that's decadently dense and moist. We bring it all together, with shaved, dark sea salt chocolate on top along with our hand-covered, dark chocolate espresso beans. For a bit more depth, we served it with our lightly sweetened, fresh-whipped cream.

As you might guess, it was cut and served after dinner. But we've since been informed it was a fan favorite for a few guests as breakfast the next morning. Like we said, it's always a great time to eat dessert.

This drop-off style seafood bake was delivered to a family looking to cap off their week-long vacation in Lewes. The menu included our seafood bake, with lobster, shrimp, mussels, clams, shrimp, corn and potatoes and smoked sausage along with one of our grilled samplers, this time featuring burger sliders and dogs, grilled, cilantro-lime chicken, steak bites and sesame tuna bites. It also featured one of our signature grazing boards, grilled romaine salad and sweet treats tray, with dark chocolate, pomegranate, cherries and cream puffs.

This time around, our clients wanted our personal chef service to help them celebrate a Memorial Day Weekend family and friends get together. Everything on the menu was prepared at their house: beef tenderloin, lamb chops, chili-lime corn, marinated chicken skewers, jumbo shrimp and a medley of veggies were grilled on-site and chilled salads were prepared fresh to balance all that warm and juicy fresh-off-the-grill-goodness. Our favorite was an Israeli salad that featured cucumber, tomato, scallions, basil, mint, cubed Feta cheese and fresh-squeezed lemon and olive oil. Another of our signature grazing boards started it all off while our lemon cheesecake parfaits and cake pops filled their sweet cravings.

Inspirational Girls Night

A couple of weeks ago, I had the privilege of preparing and serving five beautiful ladies dinner. As we were packing up at the end of the evening, I kept thinking about how inspirational the whole evening had been. I left feeling great!

While my husband and I were setting up, the ladies started coming downstairs one by one, and they were all fabulously dressed for a special evening. As the wine and well deserved compliments started to flow, we began to get to know our clients and learned that they all worked together at a school. We started the evening off with a beautiful charcuterie board on the porch, followed by surf & turf martinis along with savory sausage & pepper skewers. As I served, I got to hear tidbits of conversation, and was blown away by the praise and admiration that they shared for each other. As the night went on, I noticed one or two ladies excuse themselves and return wearing more laid back attire; it was time for comfort and dinner. We moved to the dining area with a cucumber pineapple gazpacho then a roasted broccoli salad. The conversation, throughout dinner of sautéed chicken breast and jumbo shrimp in a lemon basil sauce over home made pasta and seared garlic green beans, continued to be uplifting and fun. The stories that I enjoyed were so refreshing, there was not any griping or negativity from these lovely people. In a job that I can only imagine is trying, frustrating and challenging, I did not hear any complaining from them. They laughed, praised their students and best of all, celebrated each other. As we served some sweet bites, I noticed some had changed into pajamas. We took our leave as they settled in and began to play some games.

After we did a final once-over to make sure the kitchen was clean and all our cooking gear was packed and ready to go, the ladies thanked us again for helping make their night so wonderful and memorable. We couldn't help but feel the same way to them. Thank you ladies, can't wait to do it again.

Celebrating Everyday

You don't need a special occasion to celebrate or to eat well. At our house, we like to celebrate everyday and eat well while we do it. Here's a pre-game snack we put together before heading out to a baseball game which included sharp provolone and fresh mozzarella cheeses; some toasted Italian and ciabatta breads; pumpkin ricotta and crispy salami crostini; pepperoni, salami and peppered ham; pan con tomate and fresh fruit. Maybe not quite as pretty as the one we did for a private party this weekend, but just as tasty!
